This delicious raw organic sweetener is obtained by concentrating the organic sap from the maguey (agave salmiana), at room temperature to preserve its unique nutritional value.
WHERE DOES MAGUEY SAP COME FROM AND HOW IS IT OBTAINED?A maguey needs to grow for twelve years before it is ready to produce the sap, or aguamiel. To obtain it, the central part of the plant is removed before it starts to develop its flower.
After a while, a craftsman scrapes this hollow made in the center of the maguey with a spoon-shaped instrument, and the sap that was to have nourished the flowering stalk slowly starts to flow. It is then collected several times a day, for up to four months. This craft is known as tlachique, and it represents an ancient Mexican tradition.
